Michael, your content is very appropriate and I agree wholeheartedly with most of what you say- especially that processed food is bad, but I believe you are overgeneralizing breads. I find that people feel gluten free= healthy, when in fact, every gluten free bread I have seen is made from processed flours (like rice flour) that have very little nutrient value. My wife and I own a company that manufactures sprouted grain breads and to categorize them with breads made from processed flours is an injustice. The sprouted breads we make do have lower calories and carbs (30% lower on average) than breads made from processed flours, even if they are whole grain. Most importantly, sprouted grains are unprocessed, more whole foods than flour. Just wanted to set the record straight. Thank you.
